Back-to-School Meal Inspo for Busy Parents

It’s that time of the year again – Fall is here and kids are back in their school routines.  If you’ve made it through the first few weeks of packing school lunches, you’re probably looking for some new quick and nutritious meal inspiration that will keep your kids from school lunch burnout.

Southwest Mango Quinoa Blend – This versatile blend has it all – fruits, veggies, beans and whole grains. The vibrant colors make it visually appealing to both kids and adults and it can be used in many different ways.

Southwest Mini Quinoa & Egg Bites 

You’ll need: 

  • 1 Bag Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions
  • 5 Eggs
  • ¼ cup Sour Cream
  • ⅓ cup Colby & Monterrey Jack Cheese, shredded
  • Optional: Green Onion, Diced Tomato, Salt and pepper to taste

(not so fried) Riced Cauliflower Blend – As a nutrient dense alternative to fried rice, this blend is a colorful way to introduce more veggies into your child’s diet. If they aren’t buying it at first, try mixing in some rice so it’s half rice and half cauliflower and slowly reduce the amount of rice over time. 

Tofu Riced Cauliflower Bowl 

You’ll Need:

  • 1 Bag Path of Life (not so fried) Riced Cauliflower Blend, cooked according to package instructions and cooled to room temperature.
  • 1 Package Tofu
  • ¼ Seedless Cucumber, thinly sliced
  • ¼ Small Red Onion, thinly sliced
  • ¼ Tsp Sea Salt
  • 1 Tbsp Sugar
  • 2 Tbsp Rice Vinegar
  • Optional: Chopped Fresh Cilantro

Quinoa Pizza Bites 

You’ll Need:

  • 1 Bag Path of Life The Original Quinoa & Kale, cooked according to package instructions
  • ¼ Cup Flax Meal
  • 1 Egg, beaten
  • 2 Tbsp Fresh Basil Leaves, chopped
  • ¼ Cup Parmesan Cheese, grated
  • ½ Cup Marinara Sauce
  • Optional: Additional grated Parmesan Cheese and Chopped Fresh Basil

Quinoa and Kale Chili

You’ll need:

  • 1 Bag Path of Life The Original Quinoa & Kale, cooked according to package instructions
  • 1 Medium Zucchini, cored and diced
  • 1 Medium Red Bell Pepper, seeded and diced
  • 1 Medium Red Onion, diced
  • 2 Tbsp. Minced Garlic
  • Optional: Salt & Black Pepper, to taste
  • 3 Tbsp. Corn Flour (masa harina)
  • 1 ½ Tbsp. Chili Powder
  • 1 Tbsp. each Cumin and Smoked Paprika
  • 2 Cans (14.5 oz.) Diced Tomatoes
  • 1 Can (16 oz.) Garbanzo Beans (chickpeas), drained and rinsed
  • 1 ½ Cups Vegetable Stock

Organic Berry or Apple Cinnamon Steel Cut Oatmeal – Oatmeal is one of the most filling and satisfying breakfast foods because it’s packed with fiber, nutrients and a bit of protein to boot. Berry-Banana Oatmeal Pancakes 

  • 1 package (5 oz.) of Path of Life Organic Berry Steel Cut Oatmeal, prepared according to package directions and cooled at room temperature
  • 1 ¼ Cups Gluten Free Flour – such as Oat Flour
  • 2 Tsp. Baking Powder
  • ½ Cup + 2 Tbsp. Almond Milk
  • 2 Eggs
  • 1 Medium Mashed Ripe Banana – about ⅓ cup
  • Optional Greek yogurt, fresh berries, banana slices, maple syrup or honey
