Southwest Chicken Tacos

Ingredients
1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions.
12 Hard Taco Shells
2 Cups Chicken, shredded
1 ½ Cup Salsa
Optional: Avocado, Green Onion and Shredded Cheese

instructions
Combine chicken and 1 cup of the salsa in a large skillet. Bring to a simmer over medium-high heat.
Stir in Southwest Mango Quinoa Blend. Cover and cook 3-4 minutes or until heated through.
Fill taco shells with chicken & quinoa mixture. Serve with remaining salsa and top with your favorite toppings.
