Southwest Chicken Tacos &

Ingredients

  • 1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend
  • 12 Hard Taco Shells
  • 2 Cups Chicken, shredded
  • 1 1/2 Cup Salsa
  • Avocado, Green Onion and Shredded Cheese (optional)

instructions

  1. Combine chicken and 1 cup of the salsa in a large skillet. Bring to a simmer over medium-high heat.
  2. Stir in Southwest Quinoa. Cover and cook 3-4 minutes or until heated through.
  3. Fill taco shells with chicken & quinoa mixture. Serve with remaining salsa and top with your favorite toppings.
