Gluten-Free Quinoa & Kale Chili &

COOKING IS SIMPLE!

Ingredients

  • 1 Bag (10 oz) Path of Life The Original Quinoa & Kale, cooked according to package instructions
  • 1 Medium Zucchini, cored and diced
  • 1 Medium Red Bell Pepper, seeded and diced
  • 1 Medium Red Onion, diced
  • 2 Tbsp. Minced Garlic
  • Salt & Black Pepper, to taste (optional)
  • 3 Tbsp. Corn Flour (masa harina)
  • 1½ Tbsp. Chili Powder
  • 1 Tbsp. each Cumin and Smoked Paprika
  • 2 Cans (14.5 oz.) Diced Tomatoes
  • 1 Can (16 oz.) Garbanzo Beans (chick peas), drained and rinsed
  • 1½ Cups Vegetable Stock

  1. In a large saucepan, saute zucchini, red pepper, onion and garlic in olive oil on medium-high heat.
  2. Once onions are lightly browned, add flour, spices, tomatoes, beans and stock.
  3. Reduce heat and simmer for 15 min., stirring occasionally.
  4. Stir in The Original Quinoa & Kale. Simmer an additional 5 minutes and season with salt and pepper, if desired.
  5. Serve with sour cream, cheese, green onion or warm tortillas, if desired.
