Southwest Mini Quinoa & Egg Bites &

Ingredients

  • 1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions
  • 5 Eggs
  • ¼ Cup Sour Cream
  • ⅓ Cup Colby & Monterrey Jack Cheese, shredded
  • Green Onion and Diced Tomato (optional)
  • Salt and black pepper, to taste (optional)

  1. Preheat oven to 350°F. Spray a 24-cup mini muffin pan with non-stick cooking spray. Set aside.
  2. Combine quinoa, eggs, sour cream, cheese, salt and pepper in a small mixing bowl. Whisk well.
  3. Bake 9-11 minutes or until eggs are set. Cool in pan 5 minutes.
  4. Top with additional sour cream, green onion and diced tomato, if desired. Serve warm or cold.
