Berry-Banana Oatmeal Pancakes &



  • 1 package (5 oz.) of Path of Life Organic Berry Steel Cut Oatmeal, prepared according to package instructions and cooled at room temperature
  • 1 1/4 cups Gluten Free Flour - such as Oat Flour
  • 2 Tsp. Baking Powder
  • 1/2 cup + 2 Tbsp. Almond Milk
  • 2 Eggs
  • 1 Medium Mashed Ripe Banana - about 1/3 cup
  • Optional: Greek yogurt, fresh berries, banana slices, maple syrup or honey



Chef’s Tip: For a vegan version use your favorite egg substitute and dairy-free yogurt.


  1. Combine first 3 ingredients in a large bowl; stir well. Combine cooled oatmeal, almond milk, and eggs in a small bowl; add to flour mixture, stirring until smooth. Fold in banana. Let stand 5 minutes.
  2. Spoon 1/4 cup batter per pancake onto a nonstick griddle or nonstick skillet over medium heat. Cook 30 seconds or until just set at the edges; turn and cook 30 seconds or until lightly browned.
  3. Serve topped with yogurt, fruits and syrup or honey if desired.
