2 (5 oz.) packages of Path of Life Organic Berry Steel Cut Oatmeal, cooked according to package instructions and kept warm
½ cup Orange Juice
1 tbsp. Maple Syrup
½ tsp. Cornstarch
1 cup Blueberries
Dash of Salt
½ tsp. Lemon Juice
2 tbsp. Lowfat Yogurt (vanilla or plain, dairy or non-dairy)
Optional: Blueberries, Raspberries, Lemon Curls.

Chef’s Tip: For a tangy twist, swap out the yogurt for sour cream or crème fraiche. Use any leftover sauce in smoothies, over yogurt, or over ice cream.
Combine orange juice, maple syrup, cornstarch, and salt in a small saucepan until smooth. Add blueberries. Bring to a boil over medium-high heat. Cook, stirring, 3 minutes or until berries pop. Remove from heat and stir in lemon juice. Cool slightly.
Divide oatmeal among 2 bowls. Top each with 1 tablespoon yogurt. Top with sauce. Garnish with fresh berries and lemon curls, if desired.
