Southwest Quinoa Breakfast Burrito &

COOKING IS SIMPLE!

Ingredients

  • 2 Bags (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions and cooled to room temperature
  • 1 Dozen Eggs
  • 1 Cup Shredded Mexican Cheese Blend
  • 8 Burrito Size Tortillas (10-inches), warmed
  • 1 Avocado, sliced into 16 strips

Chef’s Tip: If preparing in advance, place burritos into resealable plastic freezer bags and freeze for up to one month.

  1. Scramble eggs in skillet.
  2. Warm one tortilla in microwave or on stove top. Top tortilla with 2 tbsp. eggs, 1/3 cup Southwest Mango Quinoa Blend, 2 tbsp. cheese and two avocado slices.
  3. Fold burrito-style. Repeat steps to make 8 burritos.
