Southwest Quinoa BBQ Salad Boats &

Ingredients
1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions and cooled to room temperature
1 Cup Boneless, Skinless Chicken Breast
1 Bag Romaine Lettuce Hearts
¾ Cup Colby Jack Cheese, shredded
1⁄3 Cup Barbecue Sauce
1 Plum Tomato, diced
1 Small Avocado
Optional: Lime Wedges
Cookware
instructions
Fill lettuce leaf with ½ cup of Southwest Mango Quinoa Blend, diced chicken, cheese, tomato and avocado.
Drizzle with barbecue sauce and your favorite dressing.
Serve with lime wedges, if desired.
