Southwest Breakfast Scramble &

Ingredients

  • 1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions
  • 1 Tbsp Olive Oil
  • 4 Eggs, whipped
  • 2 Green Onions, sliced
  • 2 Tbsp Queso Fresco, crumbled
  • Salsa (optional)

instructions

  1. Heat oil in a medium-sized nonstick pan over medium heat. Add eggs and green onions. Cook and stir 3-4 minutes or until eggs are mostly cooked.
  2. Remove from heat. Add Southwest Mango Quinoa. Continue mixing until eggs are cooked through.
  3. Transfer to a plate and top with queso. Serve with salsa, if desired.
