Southwest Breakfast Scramble &
COOKING IS SIMPLE!
Ingredients
1 Bag (10 oz.) Path of Life Southwest Mango Quinoa Blend, cooked according to package instructions
1 Tbsp Olive Oil
4 Eggs, whipped
2 Green Onions, sliced
2 Tbsp Queso Fresco, crumbled
Optional: Salsa
Cookware
instructions
Heat oil in a medium-sized nonstick pan over medium heat. Add eggs and green onions. Cook and stir 3-4 minutes or until eggs are mostly cooked.
Remove from heat. Add Southwest Mango Quinoa Blend. Continue mixing until eggs are cooked through.
Transfer to a plate and top with queso. Serve with salsa, if desired.
