Jerk Tofu with Cilantro Lime Rice &

Ingredients

  • 1 Bag (10 oz.) Path of Life Cilantro Lime Rice Blend, cooked according to package instructions
  • 2 Tbsp + 1 Tsp Olive Oil, divided
  • 1 (14 oz) package Firm Tofu, cut into 3/4” cubes
  • 1 Cup Red and/or Orange Bell Pepper, sliced
  • 3 Green Onions, cut into ¼" pieces
  • ½ Cup water
  • 3 Tbsp Jerk Marinade
  • ¼ Tsp Salt

Chef’s Tip: Round out this island leaning dish with cornbread and fresh melon. For a heartier meal, simply double the rice.

  1. Pat tofu dry with paper towel. Heat 2 tbsp oil in a large skillet over medium-high heat. Add tofu; saute 6 minutes or until lightly browned. Transfer to a plate and keep warm.
  2. Add remaining oil to pan. Add peppers and onions; saute 2 minutes or until it begins to brown.
  3. Add water, jerk marinade and salt to pan; cook 2 minutes. Add tofu and stir to combine.
  4. Serve over Cilantro Lime Rice Blend with sliced green onions, if desired.
