Butternut Queso with Cilantro Lime Rice &



  • 1 Bag (10 oz.) Path of Life Cilantro Lime Rice Blend, cooked according to package instructions.
  • 10 Ounces Butternut Squash, cooked
  • 1 Cup Coconut Milk or Plant Milk of Choice
  • 2 Tbsp. Nutritional Yeast
  • ¾ Tsp. Salt
  • ½ Tsp. Chili Powder
  • 1/3 Cup Canned Diced Tomatoes with Green Chilies
  • Optional: Cilantro Leaves



Chef’s Tip: Buy frozen cooked or fresh already peeled and cubed squash for speedy prep. Leftover cooked squash is perfect for this recipe. Also great with cooked sweet potato or carrot. This recipe is for a side dish but can also be served with chips or as a filling for cooked zucchini halves.

  1. Combine cooked squash, coconut milk, nutritional yeast, salt, and chili powder in a blender until smooth. Transfer to a sauce pan over medium heat.
  2. Stir in diced tomatoes with green chilies, Cook, stirring, until hot.
  3. Serve with Cilantro Lime Rice Blend, topped with cilantro if desired
