Deep Roots Vegan Breakfast Bowl &



  • 1 Bag (10 oz.) Path of Life Deep Roots Quinoa Blend, cooked according to package instructions
  • 2 Tsp. of Olive Oil
  • 1 (18 oz.) Tube of Polenta cut into 8 rounds
  • 1 Pint Cherry or Grape Tomatoes
  • 1 Small Avocado, sliced or chunked
  • Optional: Fresh Basil Leaves, Black Pepper, Lemon Wedges



Chef’s Tip: look for tubes of prepared Polenta with Italian foods in your grocery. Quick vegetarian version – top with an Egg cooked how you like it.

  1. Heat Oil in a skillet over medium-high heat. Add Polenta and cook 3-minutes per side or until golden brown. Transfer to a plate and keep warm.
  2. Add Tomatoes to skillet; sauté 3 minutes or until Tomatoes begin to blister.
  3. Divide Deep Roots Blend among 4 shallow bowls or plates. Top with Polenta rounds, Tomatoes, and Avocado. Garnish with Basil, Pepper, and Lemon as desired.
