Tuscan White Bean Soup &
COOKING IS SIMPLE!
Ingredients
1 Bag (10 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
½ Cup Onion, chopped
½ Cup Carrot, chopped
1 (15.5 oz.) Can Cannellini Beans, drained and rinsed
1 (14.5 oz.) Can Petite Tomatoes, diced
3 Cups Vegetable Broth
Vegetable Cooking Spray
Optional: Chopped Parsley

Chef Tip: For even faster prep, purchase pre-chopped onions and carrots.
Heat a large saucepan coated with cooking spray over medium-high heat. Add onions and carrots; saute 4 minutes or until crisp tender.
Stir in beans, tomatoes and vegetable broth. Bring to a simmer and cook 5 minutes.
Stir in Tuscan Quinoa Blend; cook 1 minute or until heated through. Divide among 4 bowls and garnish with optional topping if desired.
