Tuscan White Bean Soup &

Ingredients

  • 1 Bag (10 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
  • ½ Cup Onion, chopped
  • ½ Cup Carrot, chopped
  • 1 (15.5 oz.) Can Cannellini Beans, drained and rinsed
  • 1 (14.5 oz.) Can Petite Tomatoes, diced
  • 3 Cups Vegetable Broth
  • Vegetable Cooking Spray
  • Optional: Chopped Parsley

Chef Tip: For even faster prep, purchase pre-chopped onions and carrots.

  1. Heat a large saucepan coated with cooking spray over medium-high heat. Add onions and carrots; saute 4 minutes or until crisp tender.
  2. Stir in beans, tomatoes and vegetable broth. Bring to a simmer and cook 5 minutes.
  3. Stir in Tuscan Quinoa Blend; cook 1 minute or until heated through. Divide among 4 bowls and garnish with optional topping if desired.
