Tuscan Quinoa Stuffed Sweet Potato &

Ingredients

  • 1 Bag (10 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
  • 2 Sweet Potatoes, medium
  • 2 Eggs
  • 1/4 Cup Cheddar Cheese, shredded
  • Green Onions, chopped (optional)

  1. Pierce sweet potatoes with a fork about 5-6 times. Place in a microwave safe container and microwave uncovered on HIGH 9-12 minutes or until soft. Flip sweet potatoes halfway through cook time.
  2. Remove sweet potatoes from microwave and let cool 5 minutes. Make a small slit and scoop out potato into a mixing bowl. Stir in Tuscan Quinoa and mix well.
  3. Fill sweet potatoes with quinoa mixture.
  4. Cook eggs 3-4 minutes. Top sweet potatoes with egg and sprinkle with cheese. Garnish with green onions, if desired.
