Tuscan Quinoa Spring Salad &

Ingredients

  • 1 Bag (10 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions and cooled to room temperature
  • ½ Bunch Asparagus, thinly sliced lengthwise
  • 1 Cup Small Mint Leaves
  • 1 Cup Radishes, thinly sliced
  • 4 Cups Baby Greens, mixed
  • 2 Tbsp. Herb Vinaigrette or Italian dressing

Chef’s Tip: Use a vegetable peeler or mandoline to thinly slice the asparagus.

1. Combine the ingredients in a bowl; arrange on plates or a platter. Serve with additional vinaigrette if desired.
