Superfast Saffron Rice Salad &

1 (10 oz.) package Path of Life Saffron Rice Blend, cooked according to package instructions, cooled to room temperature
4 cups Baby Spinach
3 medium cooked Beets (golden or red), sliced
¼ cup Crumbled Goat Cheese
¼ cup roasted, Chopped Pistachios
½ cup champagne Vinaigrette
Optional: Cracked Black Pepper
Chef’s Tip: Buying pre-cooked beets (check your produce department) puts slow-cooked flavor on your table in a flash. For the prettiest presentation, serve this family style on a large plate or platter.
Arrange spinach in a layer on a large plate or platter.
Top evenly with beets, rice, goat cheese, and pistachios. Sprinkle with black pepper, if desired.
