Nicoise Salad &
COOKING IS SIMPLE!
Ingredients
1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions and cooled to room temperature
½ Cup Diced Chicken Breast
½ Cup Diced Tomatoes
¼ Cup Nicoise or Kalamata Olives
1 Boiled Egg
2 Tbsp. Balsamic Vinegar
Cookware
instructions
Hard boil egg in saucepan.
Combine Mediterranean Quinoa Blend, diced chicken breast, diced boiled egg and olives in a medium mixing bowl. Mix well.
Top with your favorite vinaigrette.
