Mediterranean Jar Salad &

COOKING IS SIMPLE!

Ingredients

  • 1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions and cooled to room temperature
  • ½ cup your favorite Vinaigrette, divided
  • 1 (15.5 oz) can Chickpeas, drained and rinsed
  • 1 Red Bell Pepper, sliced
  • 1 English Cucumber, thinly sliced cucumber
  • 8 cups thinly sliced Romaine
  • ½ cup diced Feta (with Mediterranean herbs or plain)

Chef’s Tip: Customize by substituting your favorite bean for chickpeas. Toss in leftover chopped, cooked chicken or tofu for an additional protein hit.

  1. Spoon 2 tablespoons of your favorite vinaigrette into the bottom of each of 4 glass jars.
  2. Combine the Mediterranean Quinoa blend and chickpeas; divide evenly among jars.
  3. Layer the remaining ingredients evenly over the quinoa mixture. Cover and store salads in the refrigerator for up to 1 day. Before serving, shake gently to disperse dressing, or spoon into a bowl and stir to combine.
