Mediterranean Quinoa Lettuce Wraps

Ingredients
1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions
4 Lettuce Cups (Iceberg or Butter Lettuce work best)
1 Red Bell Pepper, cut into strips
1 4-in. Piece of Seedless Cucumber, cut into strips
1 Lemon, cut into wedges
Cookware
instructions
Wash and dry lettuce and separate into nice big leaves and place in refrigerator to stay crisp.
In each leaf, add 2 oz. of Mediterranean Quinoa Blend. Add a couple of pepper and cucumber sticks.
Squeeze a wedge of lemon. Enjoy!
