Mediterranean Quinoa Breakfast Sandwiches &

1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions and cooled to room temperature
8 English Muffins, toasted
1/2 Cup Shredded Provolone or Swiss Cheese
8 Slices Cooked Bacon, halved
Chef’s Tip: If preparing in advance, place sandwiches in freezer bags and freeze for up to 1 month. To reheat the sandwiches in the microwave, place on a microwave safe plate. Microwave on HIGH for 3 minutes or until warm.
Scramble eggs in skillet.
Combine Mediterranean Quinoa Blend, eggs and cheese in a mixing bowl. Mix well.
Spoon egg and quinoa mixture onto the bottom of each English muffin, top with halved bacon slices and muffin top.
