Mediterranean Platter &
COOKING IS SIMPLE!
1 Bag (10 oz.) Path of Life Saffron Rice Blend, cooked according to package instructions and cooled to room temperature
8 oz Feta
½ Cup Sour Cream
2 Tbsp + 1 Tsp Olive Oil, divided
2 Pita Breads, cut into 8 triangles each and toasted if desired
Fresh Vegetables, mixed
Chef’s Tip: Any seasonal, fresh vegetables will work with this platter. Any leftover whipped feta makes a dynamite sandwich spread. Feeding a larger group? Double the rice blend and add side dishes of olives, fresh grapes, and hummus.
Combine the feta, sour cream, and 2 tbsp olive oil in a food processor. Process until smooth. Transfer to a bowl with a spatula. Drizzle with the remaining tsp oil.
Place the rice blend in a bowl; place on a platter or board along with the whipped feta. Arrange the remaining ingredients around the bowls and serve.
