COOKING IS SIMPLE!

Ingredients

  • 1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions and cooled to room temperature
  • 1 Tbsp Olive Oil
  • 1 Clove Garlic, thinly sliced
  • 8 Cups Stemmed Kale, sliced (one bunch)
  • 2 Teaspoons Apple Cider Vinegar
  • ¼ Cup Toasted Almonds, chopped

instructions

  1. Heat the oil in a skillet over medium-high heat. Add the garlic and saute 30 seconds or until fragrant. Add the kale and saute 4 minutes or until tender. Drizzle with vinegar and stir to combine.
  2. Divide the Mediterranean Quinoa Blend among 4 bowls. Top evenly with sauteed kale and chopped almonds.

Serves: 3 ¾ cups
