Ingredients

  • 1 Bag (10 oz.) Path of Life Tuscan Quinoa Blend, cooked according to package instructions
  • 2 Cups Sweet Potato, diced
  • 1 Cup Microgreens of Choice
  • ¼ Cup Toasted Pecans, chopped
  • ¼ Cup Balsamic Vinaigrette

  1. Place the sweet potato and ½ cup water in a microwave safe bowl. Cover and cook 4 minutes or until potato is tender. Drain well.
  2. Add the cooked sweet potato to the Tuscan Quinoa Blend and toss gently to combine. Divide among 4 bowls.
  3. Top evenly with microgreens and pecans. Drizzle with balsamic vinaigrette.
