Bruschetta Salmon with Mediterranean Quinoa &

Ingredients

  • 1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions.
  • 2 Salmon Filets, skinless
  • 1 Cup Tomato Bruschetta, drained
  • Salt and Pepper (optional)

Chef’s Tip: Feeling adventurous? Make your own bruschetta! In a small mixing bowl, combine 2 seeded and diced plum tomatoes, 1 small minced shallot, 2 tbsp of chopped fresh basil, 1 tbsp olive oil, 1 tbsp of balsamic vinegar and salt and pepper to taste. Mix well. Enjoy!

  1. Preheat oven to 425°F. Place salmon filets onto a lightly greased foil-lined sheet pan. Season with salt and pepper, if desired.
  2. Top each filet with half of the bruschetta. Bake for 10-12 minutes.
  3. Serve with Mediterranean Quinoa.
