Apple & Goat Cheese Toasts &



  • 1 Bag (10 oz.) Path of Life Original Quinoa & Kale Blend, cooked according to package instructions
  • 2 Tsp. Olive or Coconut Oil, divided
  • 1/2 medium Onion, thinly sliced
  • 1 Large Honeycrisp or other firm Apple, cored and thinly sliced
  • ½ cup Crumbled Goat Cheese
  • 3 Large Eggs, lightly beaten
  • ¼ Tsp. Salt
  • 6 slices Toasted Sourdough or Bread of choice
  • Optional: Cracked Black Pepper



Chef’s Tip: Make vegan by using vegan egg substitute or tofu for eggs, omit cheese or use vegan goat cheese. Rye, whole grain, and french bread are also delicious with this dish.

  1. Heat 1 teaspoon of oil in a large nonstick skillet over medium heat. Add onion and sauté 2 minutes or until softened. Add apple; sauté 3 minutes or until softened and beginning to brown. Transfer to a bowl; gently stir in goat cheese and keep warm.
  2. Add the remaining teaspoon of oil to pan. When hot, add the eggs and salt. Cook, stirring gently, until just set. Remove from heat; add the Path of Life Original Quinoa & Kale blend to skillet and stir gently to combine.
  3. Place 1 slice toast on each of 6 plates. Top evenly with quinoa mixture. Top evenly with apple mixture. Serve immediately.
