No-Bake Apple Oatmeal Energy Bites &

Ingredients

  • 1 package (5 oz.) of Path of Life Organic Apple Cinnamon Steel Cut Oatmeal, cooked according to package instructions
  • ½ cup Ground Flaxseed
  • ½ cup Shredded Unsweetened Coconut
  • ¼ cup Natural Peanut Butter (Creamy or Crunchy)
  • 2 tbsp. Mini Semi-Sweet Chocolate Chips or Chopped Semi-Sweet Chocolate
  • 1/8 tsp. Salt

Chef’s Tip: For a quick change up try substituting almond or sunflower butter for peanut butter in these bites. Chopped dried cherries are another delicious stir-in.

Instructions:

  1. Combine all ingredients in a bowl and stir until chocolate melts. Cover and chill 30 minutes or until firm. Shape into 20 balls, about 1 tablespoon each. Press a peanut half into the top of each bite, if desired. Store airtight in the refrigerator.
