Flavors of Greece Cucumber Salad &
COOKING IS SIMPLE!
Ingredients
1 Bag (10 oz.) Path of Life Mediterranean Quinoa Blend, cooked according to package instructions, cooled to room temperature
2 Large Cucumbers, spiralized (about 4 cups)
1 Can Chickpeas, rinsed and drained
½ Cup thinly sliced Red Onion
½ Cup Halved Greek Olives
1/3 Cup Greek Vinaigrette
¼ Cup Crumbled Feta

Chef’s Tip: Spiralized Cucumber is great- but chopped or sliced Cucumber is just as delicious in this refreshing Salad.
Combine the first 7 ingredients in a large bowl; toss gently to combine. Top with optional garnishes, as desired.
