Roasted Cauliflower Street Tacos &

Ingredients

  • 1 Bag (10 oz.) Path of Life Roasted Garlic Cauliflower
  • ½ Cup Carrots, shredded
  • 2 Radishes, sliced
  • 1 Cup Red Cabbage, shredded
  • ½ Cup Cilantro, chopped
  • 2 Limes
  • 2 Tbsp. Olive Oil
  • ½ Tsp. Cumin
  • Mini Corn Tortillas, warmed
  • 1 Avocado

  1. Combine carrots, radishes, cabbage, cilantro and lime juice in a mixing bowl. Mix well and set aside.
  2. Combine frozen Roasted Garlic Cauliflower, olive oil and spices in a mixing bowl. Mix well.
  3. Heat a large skillet over medium-high heat until hot. Add cauliflower. Cook, covered 8-10 minutes; stirring occasionally.
  4. Serve cauliflower in warmed tortillas and top with avocado slices and slaw.
