Cauliflower Crust Pizza with Roasted Peppers & Parsley &
COOKING IS SIMPLE!
2 bags (10 oz.) Path of Life Roasted Garlic Cauliflower, cooked according to package instructions and cooled to room temperature
1 Cup Mozzarella Cheese, shredded
½ Cup Parmesan cheese
½ Cup Pizza Sauce
¾ Cup Jarred Roasted Peppers
¼ Cup Flat-leaf Parsley Leaves
Preheat over to 425°F. Place Roasted Garlic Cauliflower into a food processor and pulse until finely chopped. Place Roasted Garlic Cauliflower in a kitchen towel and squeeze out as much excess moisture as possible.
Combine Roasted Garlic Cauliflower, ½ cup mozzarella, ¼ cup Parmesan and eggs in a medium mixing bowl. Mix well.
Line a baking sheet with parchment paper. Spread cauliflower mixture into an 8 x 10-inch rectangle. Bake 13-15 minutes or until top begins to brown.
Remove crust from oven. Top with pizza sauce, peppers, parsley leaves and cheese. Return to oven and bake an additional 10-12 minutes or until cheese begins to brown. Let stand 2 minutes.
