Cauliflower Crust Pizza with Roasted Peppers & Parsley &



  • 2 bags (10 oz.) Path of Life Roasted Garlic Cauliflower, cooked according to package instructions and cooled to room temperature
  • 1 Cup Mozzarella Cheese, shredded
  • ½ Cup Parmesan cheese
  • 2 Eggs
  • ½ Cup Pizza Sauce
  • ¾ Cup Jarred Roasted Peppers
  • ¼ Cup Flat-leaf Parsley Leaves



  1. Preheat over to 425°F. Place Roasted Garlic Cauliflower into a food processor and pulse until finely chopped. Place Roasted Garlic Cauliflower in a kitchen towel and squeeze out as much excess moisture as possible.
  2. Combine Roasted Garlic Cauliflower, ½ cup mozzarella, ¼ cup Parmesan and eggs in a medium mixing bowl. Mix well.
  3. Line a baking sheet with parchment paper. Spread cauliflower mixture into an 8 x 10-inch rectangle. Bake 13-15 minutes or until top begins to brown.
  4. Remove crust from oven. Top with pizza sauce, peppers, parsley leaves and cheese. Return to oven and bake an additional 10-12 minutes or until cheese begins to brown. Let stand 2 minutes.
  5. Cut into 8 squares and serve.
