Asian Party Meatballs &

Ingredients

  • 2 Bags (10 oz) Path of Life Asian Wok Quinoa Blend, cooked according to package instructions and cooled to room temperature
  • 4 Green Onions, divided
  • 1/2 lb Each Ground Pork and Ground Beef Chuck
  • 2 Eggs
  • 3 Tbsp Sriracha
  • 2 Tbsp Thai Red Curry Paste
  • 1/2 Tsp Salt
  • 1/2 Cup chopped Fresh Cilantro, divided
  • 2 Tbsp Olive Oil

  1. Chop the green onions and separate white bottoms from green tops.
  2. Combine Asian Wok Quinoa Blend, meat, eggs, onion, sriracha, curry paste, salt and half the cilantro. Mix well.
  3. Scoop meat (approximately 1½ tbsp per meatball) to make 40 meatballs.
  4. Heat olive oil in a large (12-in.) nonstick skillet over medium heat. Add half the meatballs. Cook 5-6 minutes, turning occasionally until browned; set aside. Repeat with remaining meatballs.
  5. Sprinkle with green onion tops and remaining cilantro.
